Engine dies when floored
When I start the engine it idles VERY high for a while, then I can give it a little gas once or twice and it idles down. but the idle won't go down unless I give it gas. Otherwise it will run all day at high rpm. But the biggest problem is, if I am at a dead stop, or decelerating into a low speed, and I put the pedal down it will just die. Sometimes it even gets a WEIRD response to the pedal. I'd give it gas and it would have no power and just make a wooshing sound and almost die out, then when I would remove my foot from the pedal the engine would Rev??? What the hell? On a carbed 2.8 2brl

Sounds like you have a couple of carb issues going on. The high idle may be a sticking throttle or weak return spring. When you tap the pedal it moves it and allows it to return to it's full closed position. May want to see if there is carbon build up around the throttle blades or if the return spring is weak/broke/missing/etc.
As far as it dying when you stab the throttle, you're opening the throttle blades to take in more air, but not increasing the fuel flow, so it goes lean and stalls out. I'm not a carb expert but that's what it seems like to me is going on.
