They have already answered your questions on the sensors.
the one on the timing cover wont matter as your replacing the cover with your old one.
Other sensors(cam n crank), I removed and installed freezeplugs with a swipe of silicone.
Yes your crank can say 3.1. Its the same as a 3.1
2.8 is a 2.8
3.1 is a stroked 2.8
3.4 is a bored 3.1(or bored and stroked 2.8)
