ZF 6 speed vs. T56
Is the ZF that much better than the T56 or does it just come down to preferance?

The ZF is a more complex, more expensive, and the more difficult one to rebuild. Also, parts are far harder to come by.
The T56 is easy to get parts for, a reasonably simple design to work on, and similarly strong. It's also available in more than one set of gear ratios.
It isn't that one is stronger than the other. It's that the cost of the ZF and pricier parts make is less desirable for the thirdgen owner.
I'd like to go through a ZF myself sometime but for now I'm totally happy with a T56 job here and there.
