I did it on a 87 Z28. With that year I just left all the gauges and sending units hooked up, they work without the computer.
I hotwired the stock in-tank fuel pump to run when the ignition was on and ran a Mallory return style regulator ($70ish, #4709 sticks in my mind, not sure if that is accurate) to get the pressure down to a carb friendly level. Used a Holley throttle/TV cable bracket w/ a 750 vac sec holley. Used a TCI vacuum controlled torque converter lockup kit ($70ish as well) to lockup the converter. Was never 100% happy w/ the lockup control, in OD accelerating w/ light throttle it would often fluctuate annoyingly back and forth between locked and unlocked in high gear.
I think that about covered it for that year of car, a newer TPI car w/ electronic speedo sending unit and junk may require more work, not sure.
Anyway, whole setup worked fine for about 2 years with a 350 w/ Vortec heads etc, then my stock in tank fuel pump died (had over 150k miles on it). I swapped on a mechanical carb-type fuel pump and put a piece of fuel line hose in place of the stock in-tank fuel pump. That worked fine for another year or so before the car then was totalled (while it was parked) by a 16 year old girl in a V6 Mustang...
