RPO codes are on a decal inside the center console. If it's missing, you should be able to take the VIN number to your GM dealer and they can get the build sheet for your car.
The VIN number is on a metal plate in front of the dash on the driver's side. You can read it through the windshield. It's also on decals throughout the car.
It's on the RPO decal. Decals could also be found inside the rear fenders, under the plastic of the hatch lid plus a few other places. They're not easy to find and some disassembly is required to find them all.
All the VIN numbers should match the metal plate on the dash. Although the dash plate and center console could be swapped out, it's difficult to change out all the other decals with the VIN number.

Actually, if you want to get technical, It's on the metal part of the cowl/firewall under the pad. The dash pad has a cutout to see the plate. Pull the dash pad and the metal plate is still attached to the car body.
Without the metal VIN plate in the corner of the window, the car cannot be registered unless the car is inspected and has a new VIN issued to it. All the VIN stickers are secondary but it needs that metal plate. It's actually against the law to buy, sell or own a car without the vin tag.
Many item such as doors, center console or even the VIN tag can be swapped but I doubt anyone who is trying to hide the true VIN of the car will find all the decals inside the car.
