Oil pressure issue?

Oil pressure issue?
So here's my situation..
I have a 1991 RS that once had a 305 in it with the oil pressure unit/switch down by the oil filter. I have recently done an engine swap with a carbed 350. I was using the oil pressure sending unit that was in the 305 and my oil pressure was ALWAYS all they way to the left. So after some searching I figured "old switch bad? easy fix." I put a new one in and it does the same thing! I cleaned off my plug with compressed air and made sure it was wiped off and still the same.
When the plug isn't in the sending unit it will go all the way to the RIGHT, but as soon as it's plugged in it will read nothing.
I'm assuming even my old sending unit is probably good, but why wont either of them read? I know my motor has good oil pressure, but I worry without my gauge reading...
