Undercut Valves

Transmission: 700R4
Undercut Valves

I was just at the machine shop getting valves and springs priced out for my new heads. The guy there showed me the set of valves they will use and they were undercut and I was wondering why valves are undercut?

An undercut valve has less valvestem obstructing the flow through the port.
