Most coils fail by starting to arc from the High Voltage coil to the metal part around it. As long as the engine's demand for voltage is low it jumps across the plug, under WOT the bad coil will arc internally instead.
You can test for this by leaving a timing light hooked up, with the trigger tywrapped down, on your windshield and taking it for a drive.
If the light does not go out at WOT, it's a fuel problem.
But, I think it's probably your "new" carb.
Most carbs leave the back barrels locked out until the engine is warmed up.
If the back barrels don't flow fuel, the engine will "go dead" when they open.
What kind of carb is it?
