Choking!

Choking!
I just had the most awesome driving experience of my life.
I noticed on the way to work that the car seemed like it was choking a bit, it had been doing this since i got it back, but was much more pronounced now. Kinda like the pressure was jumping around.
Well as I was driving down the highway after work and the car started jumping REAL bad and the tachometer was all over the place, if i gave it any gas, the thing would choke more. It was so bad that i was barely moving. So i pulled over and ripped open the dash on the drivers and passenger sides and checked all the wiring to make sure nothing was loose or grounding out or whatever. that checked out, so i popped the hood and checked for the same things. still nothing.
Started her back up and still the tach jumped like crazy, and when i gave it some gas, it just jumped forward and made bad noises.
Im not sure how else to describe how awesome.com this experience was.
Steve (89vert) had a pressure gauge hooked up the car and noticed that the regulator wasnt showing steady.
So far, thats all i have to go on.

Im assuming it was plugged into the manifold and is some sensor because i found the part of it thats still in the manifold.
I dont know what it is, and doubt its related to this problem, but who knows...

I can't see the first pic clearly. I'm guessing O2 sensor or temp sensor, depending on where's it was plugged into something. You said manifold, as in exhaust manifold?
purple wire is 02 sensor, would be plugged into exhaust manifold (well, into the O2 sensor.)
temp sensor is plugged into drivers side head usually. Those are the only wires I can think of that are plugged into the motors sides...
