if you are planning to keep the car mostly stock,i'd
keep the CFI-more reliable than a carb setup,
original,and greater"cool"factor just to mention a
couple advantages
My z28 was originally carb, but i swapped it over to
CFI-swapped back and forth between carb and CFI
a few times untill i had the CFI running and modified
how i liked;when i had my C/F manifold off for a
modification/porting operation i just clapped a q-jet
on in the meantime-was easy, just installed the q-jet
and intake manifold along with a vacume advance
HEI and ran it non-computer.The c/f fuel pump is
a turbine style,so fuel can pull through it easily with
the pump inactive-i just ran a seperate engine mount
pump when using the carb.
pretty much had my C/F how i liked since 1995 and
it has been extremely reliable ever since

I would recommend keeping the CFI as well. It is really not that complicated. You need to buy the GM shop manual. Very good discussions of how system works and how to trouble shoot.
If you are leaving engine roughly stock, I think it would perform much better with fuel injection. I understand you wanting to swap out the carb though. I thought about it a few times myself.
