You should be able to remove the tan carpet and replace it with black. I don't think you'll want to remove the tan carpet and leave it like that. The glue marks from the old adhesive will probably not come off without a lot of sanding. I believe where the carpet is attached is also recessed a bit to account for the thickness of the carpeting. I could be wrong about that though.
What I plan to do with mine when I convert to a black/red interior is remove my gray carpeting and replace it with black carpeting from WalMart. They have it back in the RV section near automotive in mine. It is a roll of black automotive carpet for like $8 or so.

Re: Lower center console question
I painted mine as temporary fix until I have the time to strip it and recarpet it. That was three years ago! So far, even with glass T-tops it has kept the colour well. You have to use paint made for fabric and vinyl. You don't want to over do it either or it will become stiff and hard to the touch. Apply a thin coat. Let it dry a bit, brush the pile and apply another thin coat. Brush the pile in the opposite direction and reapply etc. until you are satisfied that it is uniform.
Breaking the bond between the carpet and the GM super glue that adheres it to the console can actaully be really time consuming and the unsightly surface underneath would definitely need to be recovered.
Hope this helps,
Jon

Re: Lower center console question
Has anyone tried covering theirs with leather? Just wondering how that would look.

Re: Lower center console question
I remember seeing pics of a couple. One looked great the other kinda goofey. For the good one the guy had taken the time to stich at the corners and so on..gave it a stock look. The other was just wrapped around. It looked like what the taxi drivers do to protect their back seats.
