Car: 1982 camaro berlinetta
Engine: 5.7 350 swap
Transmission: th350 swap
Axle/Gears: 26 spline 7.5 ring gear
will not putting gaskets on my headers cause oil to come out
If I don't put header gaskets on my headers will that cause oil to come out from where the heads connect to the headers?

no . there are no oil passages there . and if youre changing header gaskets go buy the copper ones , they are forever

That's not good, either oil is getting past the valve seals or piston rings

Yep, if you have oil coming out of the exhaust ports... That is NOT good. Bad rings or valve seals or guides.
Make sure it is in fact inside the exhaust ports though, and not just running down from leaking valve cover gaskets, oil sending unit, etc. I have seen that many times before.
