Making a low temp chip for low temp thermostat?

I have a 1992 silverado 3500 with a TBI 454. It used to run at 200* until I changed the radiator. (It has a 7060 ECM and I'm upgrading from a AWUF.bin to a BAMP.bin. same basic calibrations)
Now it runs at 160+/- degrees because it has a 160* thermostat.
Checking the BIN there are several changes that happen right around or above 160*
Is the ideal fix to lower these temp settings?
The truck came stock with a 195* thermostat, say the min coolant temp to allow EGR was 180* I'm basically taking the stock difference and smoothing it down to were it's the same temp difference between new and old thermostat rating.
Hope I explained that accurately.
Will this work ok or should I just leave the temps alone in the bin and go with a 195 thermostat?

I think I would go with a 180 thermostat. 165 is too cool for a fi engine, 195 would be better for perforamce but I don't like to run that hot. You could change the temp settings but the engine could use the extra heat.

It might have a 180* in it, I used to never go under 180* but with the bad radiator it ran at 200-210* no matter what.

I just got my laptop and data logging program working so I'm going to do it the lazy way first and see what the max scanned temp reaches.

One more question, does a scanner like DataMaster get it's temp reading from the gauge sender or the engine coolant temp sensor?
I'd figure the engine coolant sensor, but the last time I scanned it the dash gauge read exactly what DataMaster was reading.
