Curious as to what amp I should use
I have 2 12 inch XS-L1236 sony xplod subs in my car right now and I need an amp to power them. Im thinking about the XM-2150GSX from sony but this guy at a car audio shop said you can't run 2 4 ohm speakers bridged on that amp, it will overheat it. He said the 1000w XM-6001GXD ES would be the only sony amp that these 4 ohm subs can be bridged on. I think it was an attempt to sell the more expensive amp but what do you think would work better? I want to stay all sony and I want to bridge my subs.

I am assuming that the subs in question are single voice coil 4ohm subs. If that is true, and the amp is a four channel amp stable to 2ohms bridged, you should be fine. If the amp is 2 channel, you could run your subs wired together in series, and then bridged to the amp.
If you are after more SPL's the way to go is add more subs, since each driver will add about 6dB to your total SPL, while it takes 2X as much amplifier power to get just 3dB. In other words, if your subs are producing 120dB with a 100wX2 channel amp, it would take a 200wX2 amp to reach 103dB, or a 400X2 amp to get to 106dB. You get the picture, watts cost a lot of dollars. Do the math, you might just get 2 of the amps you wanted to use in the first place, and 2 more drivers for the same price, or close to it as you would pay for the more expensive amp and the original 2 subs. I promise that setup will be a lot louder than just running 2 subs bridged, and it will have a lot more dynamic headroom. If the 1,000 watt amp happens to be 4 channel, get it and run 4 subs not bridged, and you will still come out ahead. I promise, 4 12" subs powered by 1,000 watts in your car will make it impossible to see out your rear view mirror! Good luck.
