Car: 06 Toyota Tundra SR5
Amp for 2 12" MTX 6000???
How big of amp should I get for these babies? Total power handeling for each is 500 watts. should I get a 1000watt amp?

No Way!
you don't want to blow them do you. If you give them peak RMS you have a very good chance of doing so. I would suggest a sony explode 760m or 880. That way you still have a little breathing room and MAN will they POUND!!!
