You'll need a cd player, harness (connects factory harness connector up to the aftermarket cd player), and installation kit (includes brackets and bezels to make everything fit and look pretty). Should be easy upgrading from a tape deck unit to a cd player.
As for speaker upgrades that depends on the budget. I was plenty happy with just upgrading the 4x6 dash vent units for acouple years. For kickpanels you usualy have to either buy a set or make a set that are fabricated for speaker sizes you want. The 2 rear side speakers in the sail panels are 6x9s. Some people replace them while others do not like the sound quality a 6x9 has and they either delete them or go with a smaller mid-bass type driver.
I would vote simple cd player and some nice 4x6 speakers at the moment. Then later are you do more research think about the other projects. As most of us have found out shops rarely produce the quality we want for custom installations.

You could run just two, but If I were you I would make all my connections under the dash (hook up all the wires in the harness) and then the speakers your not gonna hook up cover the ends of the wires so the metal can't touch each other and short. That way when your ready to hook up the other two speakers all you gotta do is hook em up and not worry about the harness.

It shouldn't matter. Normally the way it goes is the front speakers and the sail panels each have there own channel. That way you can adjust left or right and fade front or back. Which is all taken care of by the harness.
If you still have all the factory lines for the power and ground hookup in each location it should be as simple as just attaching those to the new speakers and using the correct harness to go from your GM connector to the aftermarket unit.
If those lines are not in place they'll have to be ran. Which can be a PITA.
Just take your time and don't force anything. All our plastic is getting brittle because of it's age. It's fairly easy to accidently crack out a radio faceplate if you're not careful with it.
