trim tag (cowl tag)
build sheet (if you find it), can be hidden under carpet, back seats, on top of gas tank, or in the headliner.

I know the early third gens have trim tags, but didn't they stop using them around '85? I've been known to decode them on every first gen I see.

Haha, yeah, I do the same thing, I especially love it at car shows when a guy is like "yeah, I have this .......rs-z28..." one look at the trim tag and I have to stifle a laugh when I see it's a plain jane camaro.
I'm not sure when they stopped putting them on ours, my '83 has it. If your car were to have it then it'd be found under the hood on the on top of the nose of the car to the right of the radiator(if that makes sense).
I do know that the later third-gens didn't have it, but that's all I know. You could also look for the SPID sticker that has all the RPO codes on it.

Ain't got a Camaro yet, just a C1500. I'm looking for a '87-'90 IROC-Z, and if there's no identifying original paint, I won't mind getting one that isn't red originally.

factory color will be identified by the RPO, get list of codes and run them through the rpo decoder on the main page
there may be a list of RPO codes for red paint somewhere

You can look in your console and there will be a decal and at the bottom of it you will see the code it will have B/C C/C then a number or it will have a WA then a number that will be your paint code if you can't read that one you can also find the code it's in like the 4th row down and will have a U before the number like U82

Try Compnine.com. With your VIN, it will tell you all options, including the color code of your car when if left the factory. (NOT ALL CARS ARE IN THE DATABASE)
