I'm going to buy Budnik's Famosa wheels for my new(somewhat) '88 IROC-Z. What would be a good size setup? I was thinking 16x8 in front and 17x9.5 in the back?

those would work.. I put 17's on the front and back.. and they rub on the front when I turn the car hard.. Nothing much, but a pain in the butt.. Next time I'm definately going to go a size smaller for the fronts.. I think that's a good combo

Here are some pics of my car. I have Boyd 17x9's in front and 17x11's in back. The fronts have 275/40zr17's and the rears have 315/35zr17's. The car has about a 2" drop all around and I have no problems with rubbing. I did however have to massage the rear fender well, both inner and outer to make the 11's fit, but the front is untouched. By the way, there is no motor in the car in this pic, so it actually sits much lower in the front than this picture indicates.
