how much would a stock 82 z28 weight?
also what would a/c delete tak off?
and all little other things?

According to the build sheet my '84 T/A has a shipping weight of 3,424 lbs. My car has your typical convenience and power options. T-tops, A/C, deluxe interior, power windows, and locks, etc ... A basic no option V8 3rd-gen is probably around 3,100-3,200 lbs.

3rd-gens use the lightweight R4 compressor so the A/C system doesn't weigh nearly as much as earlier cars. I would say it adds no more than 70 lbs. Its sort of a misperception that A/C adds 200 or 300 lbs to a car.
