Here is Dave91Z28 car, he has 17x11 with 315/35r17 on the back.
Here is Basett_Racing's car, he has 17 X 12, w/ 335/35/ZR17 out back
and of course CarNDrvr, he has 17x11 rear with 315/35/ZR17's
I can't find any pics with 9.5" wheels and 315s though

Those look nice. I'll add another question for this post too. What is the widest rims and tires you can fit on a thirdgen without it rubbing. (absolutely no rubbing at all)

285/35-R17 is the largest tire that's practical. Anything over that and you're sacrificing handling and tire life. With your second question it looks like you already caught on to the fact that you should match wheel size to the tire size and not just over stuff the wheel. Just because you can get the tire on doesn't mean it's a good idea. Case in point is the 295/5-R15 tires on the 15x7 rim as stated above. That's a terrible combo and the tire shop should have refused to do it. The easiest thing to do is look at the fitment tables at the BF Goodrich web site. That will tell you what rim sizes are accetable for a given tire along with the overall dimensions.

Click on the 'Sizes' link. Nearly every tire manufacturer site has this info for each tire in their tire lines.
Note that this will only tell you the relationship between wheel width and tire size. You still need to be smart on what wheel dimensions to use and the proper backspacing. An 17x9.5 will use a 5.5-inch backspacing.

QwkTrip is right, the largest I could find on all the sites for a 9.5" wheel was 285. This is for my car, but in the future, just checking now. If I get a 11" wheel I can go up to 345! I would probably get 315 or 335 though. I like ROH ZS Wheels a lot but they don't have them in 11", So I"m not sure what to get? Thanks for the reply's

I would use the 17x9.5 wheel. It will fit without issues (unlike the 17x11) and tires are more plentiful and less expensive.
